Looking for an easy but healthy breakfast or anytime meal? Well, I thought I’d share a favorite of mine with you.

Ingredients:

1 1/2 cups whole wheat flour
3 tablespoons wheat bran
1 tablespoon oat bran
2 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (fresh ground is best)
1 egg
1 1/2 cups milk
3 tablespoons olive oil
2 tablespoons brown sugar (if you use honey you will need less milk)
1/2 teaspoon vanilla extract
blueberries or other fruit, if desired

Sift dry ingredients together in a large bowl. In a separate bowl blend egg, oil, sugar, and vanilla together; pour over flour mix. Add 1 cup of milk to mix and fold carefully. Add more milk if mix looks dry. Do not over mix, batter should look a little lumpy. Heat griddle to 375 degrees, very lightly oil, pour on pancakes, add fruit. When bubbles appear on top, check a corner of a pancake, flip when they are a nice golden color.

I generally make my pancakes about 6″ in diameter and get 9 out of one batch. These will also keep well if you wrap them in wax paper and then plastic wrap and store in the freezer.
