Today I thought I would share another recipe from my sister, Leesa. My nephews have suffered with many food allergies during their young lives and Leesa has had to be very creative at meal times. This is her adaptation of a recipe that she found (I just don’t remember where she said she got it). But even if your family doesn’t have allergy problems like her’s, you will find these biscuits to be a healthy and tasty addition to your meals.

Ingredients:

  • 1/2 cup flour
  • 1/3 cup whole wheat flour
  • 1/4 cup wheat germ
  • 1 tablespoon light brown sugar
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup water
  • 2 tablespoons extra virgin olive oil

Directions:

  • Preheat oven to 450 degrees.
  • In a large mixing bowl combine the flour, whole wheat flour, wheat germ, brown sugar, baking powder, and salt.
  • Pour the water into a small bowl and slowly add the oil, whisking continuously. When all the oil has been added, pour into the dry ingredients and mix well.
  • Knead the dough 20 to 25 times on a floured board, then use a rolling pin to roll the dough (start from the center) until it is about 1/2 inch thick.
  • Use a cookie cutter, thin walled cup, or even an empty and cleaned soup can to cut dough into circles. Place the circles on an ungreased cookie sheet.
  • Bake the biscuits for about 12 minutes or until slightly firm to the tough and golden brown in color.

Robin’s suggestion: sprinkle some oat bran on top of the biscuits before you put them in the oven. I love the slightly nutty flavor that oat bran adds and you don’t have to worry about nut allergies!

These are great hot out of the oven with honey, jam, or butter. They are also great cold with tuna salad, chicken salad, or even cheese (unless you have a dairy allergy).
